A lot of both of those, about 10 minutes before you put them on the grill. Make sure the grill is hot enough to scorch the fat on the outside of the steak.

I'll also use a basic Cajun seasoning sometimes for a cowboy steak deal.

I use some Irish Oak Smoked sea salt for steaks when I go with the straight S&P mix.

Speaking of, wifey has decided no trick or treating this year. This makes me sad. To make up for it I purchased like every Halloween movie I didn't already own on Blu-Ray and it's going to be a Michael Myers fiesta (Yes, Halloween 3 we're going to do to). And I'm gonna buy like 6 bags of candy just for us. LOL. I got off on buying costume stuff this year so I say it's even.




Bears definitely sus. The one thing we can hang our hat on is that the team is just starting to get acclimated to Foles, so there is a decent chance the offense could see improvement as the season moves forward, which is sorely needed. That said, on D our pass rush is nasty and secondary has been playing strong...but our run defense is just bad. I dread our game vs the Titans. Henry is going to eat our lunch. I guess Eddie Goldman sitting out for COVID was a big deal. Our offensive line is a problem too. Foles can help them out by not being clueless out there like Mitch, but not sure how much that will move the needle. Either way, tough to really count on a team when you don't trust the boys up front on both ends. But hey, at 5-1 a playoff berth at this point should be the minimum expectation...so that's pretty hype.

We aren't doing trick or treating either. Going to set up a scavenger hunt around the house/woods for the kids. Going to let them get costumes though.

Second teleconference rescheduled. It's a teleconference with a business evaluator. My client can't stop crying. Now on a break and I don't know if she's going to be able to restart.

This is fucking insane.

I actually offered costumes. Older one doesn't want to, but he's at that age...Younger one followed suit, which was unexpected. Be interesting if he changes his mind going forward.

salt and pepper.

salted it, put it in the fridge for a while under some saran wrap and took the dog for a walk. Came back, took it out of the fridge to get it to room temp and fired up the grill.

Ordered Kylo Ren the other day for the middle kid. Oldest is making her own. Youngest will get whatever hand me down or Target leftover costume I can find.
