Targeting = ejection

Always hated the rule. It should be something like basketball, Flagrant 1 (warning: player misses high and creates contact with helmet) and Flagrant 2 (ejection: player leaves feet and makes contact using crown of the helmet). Something along those lines
 
Conspiracy theories on blown calls is also a big peeve of mine

Not having to be touched down. Receiver makes a great diving catch with no defender around, he should be able to up and keep running. It never really bothered me that much until the 2019(2018 season) Sugar Bowl when our punter went to a knee to field a snap and was ruled down.
 
Touchdown celebrations. I understand not letting a player do the electric boogaloo in front of the other team's bench but a short 5 second celebration in the end zone might deserve a warning but it doesn't deserve a penalty.
 
Wearing your college team gear in public, someone striking up a conversation with you about college football and then after about 5 minutes of conversation you realize they still think the PAC-12 is the PAC-10.
