I got about 3 pounds yesterday. Cleaning, blanching, and freezing them today.

I can find them on hikes or buy them for like $30 a pound at the farmer’s market. Absolutely delicious.

How do you use them? I grill or bake them with squares of bacon and dip in dressing/sauce of your choice. I like a dill-based cream cheese.

I usually just sauté them up with garlic, lemon juice/zest, and a little red pepper flake. But I think I’ll try them in pasta this year as well.
