For dumplings & all things bread-adjacent, it’s all about technique. Number one (okay, 1.5, because ingredients are super key) is no over-handling the dough. Turns biscuits/dumplings into hockey pucks. Something something gluten activation. It’s science, bro.

Overmixing the dough is easily the most common mistake in baking. The more a dough is mixed/kneaded, the more it activates the glutens and makes the dough "stretchy". Great for baking recipes that require yeast because of the need to let the dough proof.

Things like biscuits, dumplings, etc. need to be mixed only until they are barely holding together....I know this and I still can't stop myself from overmixing sometimes. lol

Here in south coastal New England (Dinky RI)... 45* Feels Like 43* now. It's forecast to be 50* after midnight. :noidea:

I could at least deal with these kinds of temps all winter long... But THAT ain't gonna happen! I'm sure Mother Nature has some things up her clouds for us, though... :drink:
