Watching the Niners Packers ending last night. On that lasr catch by Adams he catches it and falls down. San Fran then touches him.

Why?? Why not just let him lay there? Play isn't over til he's touched OR he gives himself up by taking a knee. Let him lay on the ground for 4 or 5 seconds or until he gets up to run/take a knee

I see this at the end of games all the time and I always wonder why defenders do the offense such a huge favor

Is it just instinct?

Well, they don't want him to get up and run into the end zone....

Not much risk of that with 3 guys around him 35 yards from the end zone though. Touching him down basically gives you about a 20% chance to win.

If you're taking the instinct out of the game and focusing exclusively on logic, I'd say it would've been smarter to lay on top of him as if to tackle him, but gently enough to not get a late hit or roughing penalty. That would prevent the receiver from getting up AND force the offense to lose a few seconds because the receiver can't get set expeditiously.

Those logical semantics aside, instinct definitely rules here. You must do everything to ensure the receiver gets no more yardage. Three defensive players may be around him, but if they're not ready (or expecting to have) to tackle him, he could slip through.
 
laying there is giving yourself up. & the ref will blow the whistle regardless.
by touching him you get credit for the tackle, unless the ref already blew it dead.
you see it on late INTs all the time.
