Hey all. Had a nice weekend. Have a few little things to pick up, then I need to get cracking on wrapping Christmas gifts for my urchins. Got cookies started over the weekend. Christmas day is still up in the air, because my wife hasn't been able to talk to my FiL yet. Wife did see MiL yesterday. MiL has at least accepted that she needs to be in a rehab facility for now, and apparently this facility seems like a better place than the one she was in last year.

We're so behind with wrapping, we have 0 gifts wrapped. This year Xmas kind of snuck up on us. We got everything pretty early but just let the wrapping part slide. My inlaws are already in town and are days are basically booked solid through the 26th -- no idea when we'll find time to sneak into the basement to wrap everything.

I was up until 4:30am Saturday night, wrapping like a mofo.

I'll probably do some split duty tonight after they go to bed and then try to wake up early to hit some tomorrow. But we have to get going to my parents house tomorrow, because I'm cooking prime rib there for the Xmas side with my side of the family. Xmas day we're going to my wife's side. Just a mad dash until the peace of the 26th lol.

Don't fuck it up.

When I make prime rib, I start the cook with a blow torch. No shit.
I do Alton Brown's method --

I've done it a few ways, sous vide I think was one of my favorites but I don't have bags big enough to have rib-on prime ribs. For that I think a torch would actually be perfect. I think the cheesecloth thing that is in his video has worked really well. Makes it look/feel dry aged at the end of it.

Personally, I don't love prime rib.

I'm making tenderloins this year.
I did a tenderloin a few years ago but I've been specifically asked to continue making the Yorkshire pudding with the prime rib drippings ever since I made it for the first time 3-4 years ago. I think I would probably choose a tenderloin with a red wine sauce over prime rib with a horseradish sauce.

Morning all.

Happy Holidays!!!!

Yorkshire pudding is the bomb. My mom used to make that every year. Special treat. I hope yours is great.

I make a bearnaise and a bordelaise with the tenderloin. Red wine is good too.

Merry Christmas.

@Bender I watched the Dead Don’t Die on Netflix. I loved it. Really fun movie.

I made Spicy Vodka for my coach buddies for Christmas. Olives, jalapenos, dill pickles & yellow peppers in vodka, accompanied by a jar of dill pickles.

You take a shot then chase it with a bite of pickle. Super good.
