What is it with avoiding gluten? If I understand correctly, you only need to avoid gluten if you have a celiac disease, which most people don't have. Otherwise there's no clear beneficial reason to avoid gluten.

I usually generate spaghetti sauce as leftover sauce from chicken cacciatore. I use crushed tomatoes and tomato paste, garlic, garlic and more garlic, then basil, oregano, thyme, crushed rosemary, smoked paprika, sea salt, cracked pepper, purefied water and zinfandel wine.

I freeze the leftover sauce and use that for spaghetti. It gets better with age.
