I just don't know what you're really doing with it that's going to be any different? Different rubs? Injections? For me, it's largely just the cut itself. I mean, you like what you like. To me, in order to get the smoke and flavor I want it needs to go a long time. Not a lot of beef cuts have the fat necessary. So like when I do a tri-tip I'll have to cover it in bacon or go for a really short time.
