Ain't no hispanics at Tri-County. Only people that go to tri-county are the dumbasses that couldn't get in initially, want to transfer in, and stupidly will spend more money to live away from home instead of going to their local community college for a year.

You gotta get yourself a smoker, yo. What I can make and take fresh off the smoker is better than anything from Franklins/pecan lodge/Goldees/Cattleack.

Hot take: Brisket is the Blantons of BBQ - it's perfectly fine, but wildly overrated and no better than stuff that costs half as much.

Whoa now. Restaraunt cooked brisket perhaps is the Blanton's of BBQ. IMO it's still the best thing you can cook on a smoker. Not that I don't love other BBQ, but mastering the brisket is something neighborhood legends are made of :suds:

I've had brisket 3 times in TX in the last 9 years, and it's really good. Like I said, nothing at all wrong with it. I just don't know what you're really doing with it that's going to be any different? Different rubs? Injections? For me, it's largely just the cut itself. I've smoked brisket 4-5 times myself and I've smoked other beef cuts that I just like way better personally.

I mean, you like what you like. To me, in order to get the smoke and flavor I want it needs to go a long time. Not a lot of beef cuts have the fat necessary. So like when I do a tri-tip I'll have to cover it in bacon or go for a really short time. I've still not tried any of the reverse sear steak methods.

And the only thing I do different is eat it when it is fresh. out of the smoker, a couple of hours to rest, then slice and enjoy. Anyone can put salt and pepper on the brisket and smoke it, it's the timing that matters most.

Yep. Most other smoked items have larger margins of error. In fact, some can’t be messed up. Not with a brisket. There isn’t an error margin or an “edit undo” button. Screw it up and you’re done.
