Oof! I've seen recipes that call for a tablespoon or so and I just couldn't bring myself to do it. Even that seems like too much. This dude was making simple syrup spaghetti sauce!
My great grandmother would put 2 teaspoons of sugar in a large batch of sauce. It cut back the acidity and the sauce never tasted sweet. All the other spices dominated. Still make that sauce today.

I feel it's from people using shit. If you have a good can of tomatoes, you're good. If you're going with some tomato paste, just let that go for a bit in the middle make a spot and you can cook off a lot of that acidity before mixing it in.
