But I'll say, if you're a person that doesn't like to spend 3x longer to cook your food, don't get a pellet smoker.

I'm good spending an entire Saturday sitting on the deck drinking beers while the smoker does its job on a pork shoulder/ribs/brisket/whatever. But even cooking a chicken breast is longer if you want to really get that smoke flavor. I threw a few breasts on the other day and left to run to the butcher before they closed. Ended up running a few more places and when the alarm went off, I texted my wife to take them off.

It isn't a good "grill" for a person without patience.

The other thing I seem to need to explain to my wife every time I cook is done temperature over time.

Another big advantage is precise temperature control over long periods. Difficult to do with gas grill.

very true... mine is usually +/- 5 degrees depending on external forces. Windy days really fuck with it.
 
My weber grill I bought this past fall got a chip in porcelain, once it chips it allows rust to set it. figured it was from opening closing lid

Decided to file a warranty claim with weber, what the hell, they're shipping me a new bowl

I can vouch for this too. Mine came in the mail from HD and one of the connections to the gas manifold had snapped off.

Talked to them and they said they can send a whole new gas manifold out, but it was back ordered 6-8 weeks. He put the order in and literally called a local HD to talk them into letting bring the open box in and swap, even though it was an online order with HD.

Swapped it out the next day. Less than a week later the back ordered gas manifold arrived.

That company has amazing service. You can tell their employees are enabled to help the customer.

gas has one function: cook fast, sacrifice flavor.

can pellet be used for a quick cook as well as a smoke?

It takes longer to reach temp than gas. And you won't get sear.

I ain't shitting.

They were finished in the over under the broiler for a few minutes.

My wife does good ribs in the pressure cooker, but they don't touch my smoked ribs.

In reality the goal for cooking ribs is to get the collagen to break down without destroying the meat. Even 3-2-1 ribs have a "steam" phase when you wrap them.

so is it more of a tool for reverse searing?

sear inside on the stove with a hot pan then transfer to the pellet grill?

Get something like this. The coal grate can be moved up and down depending on if you're trying to cook super hot or not, and you have plenty of room to offset cook if you want to "smoke" something. I have the smoker box (going to wind up getting a better smoker soon, because the lack of good insulation and temperature control is driving me nuts with big cuts of meat), but it's also my grill, and I have no complaints. A chimney starter gets coal ready in 10-15 minutes.

but it still requires me to wait for charcoal to light, which is the crux of my situation
