Usually I do them fried, but I think I'm going to bake them. Not sure the kids will like them, but Mr. Kobe and I will. Plus, I'm putting some rice and beans on the side, so they'll be fine.

We're getting through the ends of our veggie garden. Sauteed up a bunch of poblano and bell peppers with onions, them mixed that up with some leftover rice, beans, and corn. Stirred in some lime juice, came out pretty tasty.

Inb4 @inimical tells me I don't know how to cook tacos.
 
My 3 year old is disappointed he can’t fly. Says he tried hard but he can’t do it. I asked him where he was going to go if he was able to fly. He said Target.

I'm still garden-free for a few years, but between the farmer's market and my weekly veggie delivery, I'm constantly working veggies into everything I can.
