That sounds awesome. Are you Italian? The best pizza I ever had was over 20 years ago from my friends Italian mother. Never been able to find pizza that good since. It was just dough, sauce and cheese.

Yep, I should have specified. I'm disappointed that Harvard didn't beat BU to make history. Waiting for that Harvard & Northeastern final. Screw BC & BU hockey.

I had one pork dish that was just okay. Not bad but didn’t move me. You have any duds yet?

Not Italian. I just love pizza and would occasionally make my own, but I could never find a crust recipe that I was satisfied with.

During the lockdowns I got bored and started looking for a really good pizza crust recipe. Ended up finding 2 that I like. One that can be used the same day and one that needs to proof at least 24 and preferably 72 hours. The 72 hour one is better.

So I can do meats. But I have never "proofed crust". What is "proof".

Yeah basically, like @NU_FTW said, it's putting the dough in the fridge so it slows the rising process. This releases the glutens which makes the dough "stretchier". That's part of why the folks that are really good at stretching out a crust can throw it in the air and catch it without tearing the dough. It also seems to give the dough a little more flavor.

I just didnt want to single out the women when talkin bout hoes, there are only 2 genders champ, i just didnt want @moxie or @ukfanfrombirth(cali cat) to think i was talkin bout them, so wanted them to feel included and they can slap a hoe of whatever gender they might slap.

Just bein goofy nothin to read into here ;)

Grilling salmon tonight with some brussel sprouts and rice.

Tomorrow though! TOMORROW! I am breaking my no meat February with waygu rib eyes, lobster tails, asparagus and some type of potatoes.
