Being a city person, I don't get how you can keep that amount of apples fresh and crisp long enough to use them all.

Are you donating some to a food bank?

They last pretty long if you wrap them in paper and store them in the fridge.

A fair amount will get frozen as either applesauce or apple butter, as well.

I eat a lot of apples. 25 pounds would only last me about 5-6 weeks, and that's by myself. Add my family in and it's obviously less.

I haven't gotten around to getting to the shelf stable canning/jarring stuff yet, but it's probably not that far off for me. I don't think my kids are going to slow down their eating any time soon.

Have you ever tried watermelon pickles? Easy to make. It's a sugar based pickle like sweet gherkins. You pickle the white part next to the rind. Christmas staple growing up.

Here is a simple recipe for refrigerator pickles. I prefer the hot canned ones but these are decent and quicker.
