What week looks like it will shape up to be the most exciting and intriguing based on the preseason projections?
I think Oct 12th
Looks like it could be a big one.

Red River Rivalry
Ohio State at Oregon
Ole Miss at LSU
Penn State at USC
Florida at Tenn
Washington at Iowa
Kansas State at Colorado
Cinci at UCF
Iowa State at WVU
 
That is a pretty loaded one there. If I had to pick another one:
September 20
Tennessee at Oklahoma
Southern Cal at Michigan
Utah at Oklahoma State
Kansas at West Virginia
NC State at Clemson

Yeah, thought about Memphis @ Tulane. Wasn't sure how good Tulane might be having lost their coach. Should still be decent. I can see that having AAC stakes.

If UCF surprises, I agree could be a good game, with some meaning. I expect Utah to be pretty good.

Disney is redoing this Thanksgiving weekend with the SEC:

Friday - afternoon - Egg Bowl, night - Good Old Fashion Hate
Saturday - Iron Bowl, TX v. ATM, OU v. LSU

Yeah, I don't love how they've scheduled it. I wish they would have kept the Egg Bowl on Thursday night and moved the Texas and A&M game to Black Friday where it was before.

Oklahoma State vs. Colorado at Noon
Texas vs. Texas A&M at 3:30
Georgia Tech vs Georgia at 7:30

You'd have 3 of the 4 schools that historically played on Black Friday with Colorado, Texas and A&M. And with Iowa vs. Nebraska also on Black Friday you'd have all 4 of them.

I feel like the highlighted games are all going to have at least one team unranked, or even downright bad. I don't see the intrigue over 10/12 other than OSU/michigan and ND/USC. I guess A&M/Texas for the nostalgic types but that'd be about it.

It's just a matter of preference. I'd rather watch The Egg Bowl before this years version of UF/Tenn. Same with Texas vs A&M. UF/Tenn was my favorite game to watch growing up(late 90's/early 2000's). But neither have been good in the same year in forever.

If I were to rank the games:
1. Michigan vs. OSU - week 14
2. OSU vs. Oregon - week 7
3. Texas vs. OU - week 7
4. ND vs. USC - week 14
5. A&M vs. Texas - week 14
6. OU vs. LSU - week 14
7. PSU vs. USC - week 7
8. LSU vs. Ole Miss - week 7
9. Auburn vs. Alabama - week 14
10. Egg Bowl - week 14

Both are good weeks, but I think the depth of games in week 14 puts that over the top.
