I know. That's why I didn't get a burger. I got a filet.

I had my first bison burger probably thirty years ago. A friend of mine's pops kept buffalos as pets and every now and again, he'd shoot one and have it butchered. I remember the burger and jerky. Both very good.

I had a buffalo tenderloin steak at a Ted's out in Denver.

It was pretty fuckin tasty.

There is a kickass steak joint outside of Medora, ND that serves the beat damn bison ribeyes you’ll ever find. I need to get back out to that place next time I’m out there.
