The whole point of a brine is to get the liquid absorbed in the meat. Brine a turkey for at least 12 hours and you’ll never have a dry turkey. Dry brining is simply putting a dry rub on and letting it set for a period time and that’s not a true brine because the literal definition of brine is a mixture of salt and water.Not sure why you think the first part. Second is obvious.
