One of the best meals I've ever had was when I was down in Belize. We hired this local to take us out on his boat to fish. He brought a buddy along and we caught mostly a bunch of snapper and his buddy would dive down to the ocean floor and bring back up lobster.

I got high as a kite, fishing in the crystal clear ocean while listening to Bob Marley. Then he and his buddy took us to this private island they knew of with a wood burning stove and prepared all the fish and lobster with some vegetables and seasoning and we ate it right there.

So damn good. So good that we hired him again two days later.
Everything sounded good until Bob Marley.... never could get into that...



I've heard of these "private excursions" that you can do out of local villages along the coast, but everyone local gets in on the feast. I'd try it, given the opportunity.

Hindsight 20/20 it may not have been the smartest idea. San Pedro isn't the safest city in the world depending on where you are. And this guy was our water taxi driver the first night we were there and we just happened to chat him up.

For all we know he and his buddy could have taken us out to sea, robbed us blind and dumped us in the ocean.

I also grew very fond of Tom Collins down there. Might be my new favorite drink.
Mr. Collins was a good man! I think that's where I first learned that I actually like gin.

I'd always just had gin & tonic, but this was next level...and really simple.

Can't tell you how many I had when I was there. So good and refreshing, it's no exaggeration that I could've had over 30.
