This is my first day WFH in over a week and I was gone all weekend…I have no milk or creamer for my coffee. This sucks :sigh:

I usually generate spaghetti sauce as leftover sauce from chicken cacciatore. I use crushed tomatoes and tomato paste, garlic, garlic and more garlic, then basil, oregano, thyme, crushed rosemary, smoked paprika, sea salt, cracked pepper, purefied water and zinfandel wine.

I freeze the leftover sauce and use that for spaghetti. It gets better with age.
Similar here: sauté onion, add garlic, couple sweet italian sausages, tomato paste (brown it a little before adding the more liquidy tomatoes), crushed red pepper, crushed tomatoes and tomato sauce and a splash of whatever bottle of red is open. Herbs are from the pots outside: basil, thyme, oregano, rosemary and sage. Add a spoonful of Better than Bouillon and one other secret ingredient :eyebrows: Oh, and a parmesan rind if I have one in the freezer. I've been told that a spoonful of sugar is a good thing, but I usually forget it. Then just simmer for a few hours.

Definitely better the next day.
