Any restaurant with the word "Fusion" in its title or description needs to be avoided. Fusion means its not authentic and is a mongrelization of the original cultural/ethnic food the establishment purportedly serves.

Inauthentic culinary fads and stunts are repulsive.

The best restaurant you've ever been to was probably Olive Garden.

A chef that I trained under used to say that there are very, very few truly original/authentic recipes because recipes get tweaked/changed.

Even "original recipes" that have been "handed down for decades" are unlikely to be exactly the same as when the recipe was first made. People get recipes and then change them to fit their own tastes. Chances are, even the originator of the recipe has tweaked it at least a little compared to when they first made it.

"Fusion" restaurants are just that "tinkering" that most folks do on a larger scale. Like any other fad...some fusions will eventually fade away and some will stick and become part of the culinary "culture".
