I like to cook tri-tip in mine. Get it to a nice med. rare, then sear it in a cast iron pan.
Fucking busted the handle on mine last nite. :sigh:

Now it can't hook to the pot.
 
Oh man, that suuuuuucks.
I shrink-wrapped the 3 leftover pieces of PR and then just put it in a big pot of water on the lowest temp for an hour, hour and a half. Actually turned out great. That is the only way I've ever been able to re-heat prime rib and not ruin it.
 
OK, I saw some sous vide vids. For steak, I don't like that you have to cook it twice (to sear it - an extra step) after you've sous vide'd it.
 
Bengals-Broncos also wants to be a 6-3 game. Bengals stupidly decided not to kick a field goal to tie it, and get stuffed on 4th & goal. No wonder they're 7-8.

The searing is almost as much about "look" as much as adding flavor and texture. A gray steak just looks unpalatable.
