I ordered one of the new ones for my MIL a few weeks ago when we were at her house and it was awful... it was cold and none of the cheese was melted. Chipotle doesn't have a fucking clue how to make quesadillas.

i've never tried to make one, but i feel like it should be pretty fucking easy. basically grilled cheese with a tortilla instead, no?

Pretty much how I make them. Tortilla, cheese, meat. If you want a smaller one, fold it in half like an omelet, or you just plop another tortilla on top. Flip at some point to make sure both sides warm up and the cheese melts.

Honestly, I never eat grilled cheese but I make some version of one pretty much every day. My youngest daughter is on some kind of carb + cheese diet apparently (grilled cheese, quesadilla, cheese pizza, Mac and cheese). If I tried making one with mayonnaise she’d probably cry and not eat it. I don’t need that kind of drama in my life.

i never make grilled cheese myself (never buy bread). Tried it out once in the past few years, as I'm still getting used to the temps on an electric stove for the first time (it took me a lot of trial and error, but I finally realized 7 is not medium-high heat (don't know what would be, as 4.5 seems to work the best for me there), but mayo has a higher smoke point, so it left more room for error.

yeah, vegetable oil vs butter.

I melt the butter in the pan in a puddle, then cook it open faced until the cheese melts a little. By the time the cheese is hot enough to melt, the bread is close to done. Marry the 2 sides, flip periodically until the desired toasted level is reached.

yeah, again, don't make them myself, was just going for a mayo reference, didn't know people took their grilled cheese this serious. if accidents happen in the coming months, don't blame Martha and me (gonna work on that book right now, btw).
