Nice, and I'll tell you a secret (you may already know), a wine that costs that much out of the gate is almost certainly suitable for "cellaring." Really well made wines can be aged in the bottle under appropriate conditions for a LONG time, and the aging adds a subtlety that is out of this world.A former associate bought me a $300 bottle a few years ago and goddamn that was the best wine I've ever had and it wasn't close.

Same on tartare. I've never had carpaccio, so I'm not sure if I'd be alright with it or not. That's at least thin and usually has some other textures involved.

Yeah, careful what you wish for on that tip.Got my kids to try sushi rolls on Sunday night and they loved them. Started them out with California rolls and now we'll slowly make our way onto other options. Even if they both just like California rolls, it opens up the options for getting sushi more often.

I had a few bottles that I kept 20+ years and they were like NOTHING I've ever drank before.
If you have the patience, I HIGHLY recommend it.
Another cool idea is to buy your kids a nice bottle and save it to drink with them when they turn 21.
