I do everything that way now.When doing prime rib I do reverse sear. I'd go light on smoke

Turkeys are a cinch to toss in for about 10-12 hours. Maybe do a ham this weekend.

So I asked for a smoker thinking a good electric one or maybe an offset charcoal/wood burner.
The Mrs got a relatively small Weber charcoal smoker. I’ve used it a few times....and it’s aight.
But I’m already ready to upgrade.
