Any of the other grillmasters here ever made their own pastrami?

I'm getting impatient with the brine time. Some recipes say 3-5 days, others 5-7. This is day 4 and I probably should wait until Saturday, but I want that shit now.
Never brined my own

I forgot this year, but usually after st paddys day you can pick up corned beef on clearance and after some rinsing/seasoning turn those into pastrami

I assume you mean grillmaters, not gill, but in either event, what the fuck does it have to do with pastrami?

I've never made pastrami, but have made corned beef, which is pastrami without the peppercorn.

I've been almost 1 year and 4 months but expecting to go back in June
For the most part, yep. At this point, I don't think I could go back.

Compared to before, I save 1.5 hour every day just by not commuting, which works out to over 2 weeks of my life every year. That's not even taking into account the fact that when it's slow, I can also get chores done around the house during business hours. Sometimes even an errand or two. And the freedom to live wherever I want as long as I have good wifi is huge

The drawback is that sometimes it makes me a little stir-crazy and the lack of human interaction, but that just makes me more eager to get outside and do stuff when work is done. So oddly enough it's kind of a boon to my social life too, cause I'm not coming home in the evening feeling too exhausted to do anything.
 
Damn it... Have training all day Tuesday. I need to take a day off sometime next week.
 
Supposed to be 80 on Tuesday. Might take the day off and walk 18
Mr. Kobe and I are walking 9 tonight. Now that Lil’ Kobe is old enough to babysit Coal, we are planning on getting golf in at least once a week. Got a cheap membership at the course down the road, so we intend to use it.

I foraged for fiddleheads yesterday and I am sore as hell today. Back is killing me.

Don't have all the deets, but apparently one of my step-nieces was put in a crisis center.

It's been tough sledding for my BIL's kids. Their mom is a fuck-up. She was basically trying to live off the alimony money after he divorced her, and once that dried up, she apparently had a breakdown or something, and started using drugs.

So the kids went from a 50/50 split custody sitch to BIL has full custody and the kids barely see their mom. Add that to the pandemic nonsense, and this girl going from 8th grade to high school this year, and she's had a lot going on in the last few years.

Apparently it wasn't to the level of finding her in the bathtub with razor cuts, so hopefully it's something that she can get a handle on and get past.
My niece made an attempt about 6 years ago. She’s now a college senior and frankly an amazing person. Hopefully this will pass with some assistance.

My SIL that tries is back home and I saw her last weekend. She seemed mostly good. There was that slight vacant look you see in people that are on meds, but I really enjoyed being around her. It had been about 18 months since she was even a little bit palatable.
 
it does blur the lines of what is and isn't work time, so that's the down side.

Been doing this since 2012, so everybody in the house knows work time is pretty fluid. I might have a meeting at 6pm, but I also might be able to take a 3 hour "lunch" in the middle of the day and go to the community pool with the family.
Same. I don’t like that the boundaries are so blurry, but it has a lot of positives. I think I’ll do 2 days in the office and 3 days out starting soon. Just waiting on my paralegal to have her vaccine fully kick in.

Right now the kid's pissed off at everyone about everything. Hopefully, in a few years, they can look back and laugh at things, but according to my sister, they've had all sorts of issues trying to get clothes and stuff to her. Like, she can't have clothes with drawstrings and stuff, so they tried bringing her some of her favorite jeans, but the jeans all have tears in them, and the crisis center sees those as "strings", so those can't go in.

She obviously wasn't allowed to have a razor, so they tried bringing her Nair. Not allowed, due to alcohol content. And so forth. And all the kid is seeing is that she doesn't have clothes she wants, and her dad and my sister can't get her necessities (I have no idea if the mom is able to get anything to the center, but I haven't heard that she has).
