at the end of the season if Oregon, USC or UCLA win the Pac 12 and 5 years from now what will people say about the utah florida game? florida beat utah maybe some would say Florida beat Utah coming off a pac 12 championship they year before.

College football and basketball and sports like these have this misconception of a defending champion. UGA is not the defending champion because no one can take the championship away from them. they are forever the 2021 champions. if they win it again they are then back to back champions. a defending champion would simply still be champion. now they are 2021 and 2022 champions.
Anthony Joshua current heavy weight champion in boxing is a defending champion. if he loses he loses his championship. if he wins he is still the heavyweight champion. not back to back.

in your alternate reality, how long does a team remain champion? Immediately after winning they lose it to ‘no one’? The next morning? Months? Until the first game of the following season? Sometime mid season? After a first loss? After an Oregon fan thinks their team is better despite losing back to back games to them?

I stand corrected. You are right. Georgia was ready to unleash their adjustments to stop Jameson Williams, lucky for him he got hurt. Doesn't matter Metchie was missing either -- their 4th string WR should match his 96 catches and 1200 yards. :)

Baylor and Illinois are 25th and 26th respectively in SP+. Illinois lost to a bad Indiana team, Baylor lost to BYU and WVU.
