EVERYONE eats food, EVERYONE can distinguish between a good meal and a bad meal so its a non-starter for me.

Just like I gag everytime I see that Mexican beer commercial that states being a chef is "one of the most challenging jobs in the world". No, working underground mining coal or working being a heart surgeon is a challenging job.

It sounds like the cast should cook more evenly if it holds heat longer.



Otherwise, makes sense to me. Carbon basically replaces your everyday non-stick

Cast Iron isn't perfectly even so will have hot spots across the pan. Carbon steel is smooth so heat should distribute evenly over the pan
