When I was in the restaurant business many moons ago, I remember the fryers, especially the chicken broaster, needing pretty regular repairs....maybe once every few months. The ovens were gas, and indestructible. Ice cream machines were cleaned by hand at least once a week and never needed maintenance that I recall.We run into this issue with our combi ovens a lot. The damn things cost 20k but over their life repairs are daunting. It's almost cheaper to just buy a new one once the warranty expires.
