my only issue with an offset is I don't really want a stack of wood and I'm usually only smoking 1-2 racks of ribs or one pork butt at time

I like idea of putzing with fire all day though
I usually do mostly charcoal when I smoke. I'll throw some pear wood in there on occasion, but I don't really use a ton of wood when I smoke. Keeping a steady temp in this thing is a pain in the balls, though, and it doesn't really cook super even. I've been pretty happy with just about everything I've ever smoked in it, though. Only problem I ran into was one time I had a brisket that just wouldn't cook. Think I had it in the smoker for like 14 hours before I gave up and threw it in the oven so I wouldn't have to throw it out. Wound up ordering Chinese for dinner that night.

price per pound was the same at Sams between the Tomahawk and boneless ribeyes, so my only waste was the cost of the bone.
