I usually do mostly charcoal when I smoke. I'll throw some pear wood in there on occasion, but I don't really use a ton of wood when I smoke. Keeping a steady temp in this thing is a pain in the balls, though, and it doesn't really cook super even. I've been pretty happy with just about everything I've ever smoked in it, though. Only problem I ran into was one time I had a brisket that just wouldn't cook. Think I had it in the smoker for like 14 hours before I gave up and threw it in the oven so I wouldn't have to throw it out. Wound up ordering Chinese for dinner that night.my only issue with an offset is I don't really want a stack of wood and I'm usually only smoking 1-2 racks of ribs or one pork butt at time
I like idea of putzing with fire all day though
