I stuff a bunch of butter under the skin, stuff it, slather it in butter, sprinkle with seasonings, wrap it foil and bake it at 325 upside down for about the first 3/4's of the cooking time. Then I flip it over to finish. About 20 minutes before it's done, I increase the temp to 375 and remove the foil to brown it.
Comes out super moist and tender every year.
