I definitely look at someone who can't eat gluten as disabled.

I remember going to dinner with a bunch of people at a conference and this dude brings his wife who can't eat gluten. Late in the night I'm pretty hammered and we're talking about her gluten problem and I'm pretty sure the point at which they stopped talking to me is when I said: "damn, if I couldn't ever eat pizza again I think I'd kill myself"
