Love chilaquiles and juevos rancheros. basically the same thing with different tortilla forms. Made my FIL some in Utah this weekend. I asked him if he had ever had juevos rancheros before and he said he didnt know what it was. used what we had.Chilaquiles.
I made some salsa from dried chilies the other day so I’ve been looking for ways to use it.
I fried some corn tortillas into chips. Added sautéed onions, garlic & jalapeño to some black beans. Put those on top of the chips, put salsa all around, and a little sprinkle of cheddar cheese. Baked it for a few minutes to soften the chips and melt the cheese a bit, made a well, cracked an egg in there and (over)baked it again. Sprinkled some cilantro on top and dug in.
And it’s so cute because I did a single serving in a crème brûlée dish

cool story broOK, @beardown07, my good cholesterol (HDL) is 154 and my bad cholesterol (LDL) is 70. I'll stick to the above oils stated for cooking, as well as consuming fish oil capsules, sardines and salmon regularly.
