Also- did I tell youse guise that Trader Joe's Whole Grain Dijon Mustard is pretty damn good? Bet it'd be pretty delish on a corned beef sammich.

It's also pretty good as a coating crust to roast leg of lamb. Exquisite.

Delicious. Don't overcook it though. I think mid-rare is the "correct" temp, but I ain't Gordon Ramsey, so don't quote me on it.

Yeah, it's a lot of work. Its amazing what a young kid thinks is "fun" vs what older kids or adults think of the same activity. I mean, last night we all made dinner and dessert for their mom and they enjoyed doing that because it was mother's day...but ask them to put their dirty bowl in the dishwasher on a regular day and you get the attitude

I used to love it when I would get the hair flip, eyeroll and stomp off to the room with the door slam from the daughters.

Used to call it the "trifecta".
 
First time? Try lamb braised or roasted medium rare to medium.

A little gamey, a little grassy (though that depends its diet). Shoot for something in the medium cook range. Like most meats, if its too done, it gets tough and loses its juiciness. But I personally think if you go rare with lamb or mutton, the gameyness is a bit too strong
