Who here owns a smoker?

Reverse sear is delish, but if ya don't have a good leave-in temp probe, you should get one.

How big a brisket? Just the flat or the whole shebang?
10.97 lbs. Trimmed up some. Was choice as we didn't have prime. It is huge...

It was my fault. Won't make that mistake again. I have the built in and a digital probe. I seared it when it was done and shot that temp to hell.
 
Took off at 4:30. Put an internal thermometer in it
Said 202⁰ but it reads high. My digital one temped less when I did first temps.

Personally, I think brisket improves the least by upgrading. Choice is just fine.

this has nothing to do with a smoker a lady said she has some waterfront property, also said she has 4 kids age 10-14, yeah... she did look nice. what to do?
