My cousin makes really good chilaquiles but I can never get the right ratio of soggy vs. crispy chips. For huevos rancheros, I’ve never actually ordered them in a restaurant because it seems to be lacking (no meat) but I see them and they look fuggin delicious. I was thinking I’d try this recipe with chorizo, but honestly, it didn’t need it. Just wish my egg would’ve been runny,Love chilaquiles and juevos rancheros. basically the same thing with different tortilla forms. Made my FIL some in Utah this weekend. I asked him if he had ever had juevos rancheros before and he said he didnt know what it was. used what we had.
Fried a couple corn tortillas, topped with some home made chili and cheese, two fried eggs, green guac salsa that was spicy, blob of sour cream and fresh sliced avocado. He didnt speak til he was done and said, "Is there enough to make that again tomorrow?"
I did check the fridge for some sour cream though…nice cooling effect for the salsa & jalapeños!
