Love chilaquiles and juevos rancheros. basically the same thing with different tortilla forms. Made my FIL some in Utah this weekend. I asked him if he had ever had juevos rancheros before and he said he didnt know what it was. used what we had.

Fried a couple corn tortillas, topped with some home made chili and cheese, two fried eggs, green guac salsa that was spicy, blob of sour cream and fresh sliced avocado. He didnt speak til he was done and said, "Is there enough to make that again tomorrow?"
My cousin makes really good chilaquiles but I can never get the right ratio of soggy vs. crispy chips. For huevos rancheros, I’ve never actually ordered them in a restaurant because it seems to be lacking (no meat) but I see them and they look fuggin delicious. I was thinking I’d try this recipe with chorizo, but honestly, it didn’t need it. Just wish my egg would’ve been runny,

I did check the fridge for some sour cream though…nice cooling effect for the salsa & jalapeños!

Probably. I just glanced looked at the recipe…
1. Got a flyer in the mail for Marleyspoon about 2 weeks ago
2. Was tossing old mail last night and saw the Marley thing again so I went to the website to see what it was all about
3. Checked their offerings and one of them was the chilaquiles. Surprisingly, the recipe was online.
4. Got hungry this morning, remembered the website, googled a recipe
5. Scaled down to a single serving, voilà!
 
Chilaquiles.
I made some salsa from dried chilies the other day so I’ve been looking for ways to use it.
I fried some corn tortillas into chips. Added sautéed onions, garlic & jalapeño to some black beans. Put those on top of the chips, put salsa all around, and a little sprinkle of cheddar cheese. Baked it for a few minutes to soften the chips and melt the cheese a bit, made a well, cracked an egg in there and (over)baked it again. Sprinkled some cilantro on top and dug in.

And it’s so cute because I did a single serving in a crème brûlée dish

Me either. Felt right though. Don’t think Martha’s recipe called for them, either, now that I think about it :laugh:

I should write it down before I forget what I actually did make!
 
Thought you all would like to know; I finally hit 220 lbs. today after trying for a year it felt like. I would fluctuate between about 221 and 224 but could never crack 220.

Gonna celebrate with some beers and sunflower seeds at a youth baseball game tonight.

I can't tell you how many times I've made something with whatever is lyin' around, it turned out to be so, so good, but I never wrote it down. :(

I should loose about 10lbs, but I refuse to eat right.

I'm pretty good during the week, trying to bring lunch from home every day and eat a home cooked meal almost every night. It's the weekends that get me with the booze and grilling out etc.

Whatever, I'm too old to care and not gonna give up the things I enjoy just to hit a certain weight, life's too short. Eat, drink and be merry cuz ya never know when your time will be up.
