I will say, if there is any upside to Chicago's let's just say less-than-stellar record on crime it's that cops are far, far less likely to go after people for bullshit reasons. I've straight up smoked a pre-roll and drank from a can on the beach with a cop car at most 100 yards away and not once felt worried they'd ticket me.

I was going to use peanut oil, but it looks like it only comes in a big ass gallon jug and I just don't need that much, so I'm going with canola (wesson was on sale for $3-something. The rest were almost six bucksFrying some tonight. Batter will be a combo of flour and corn meal, canola oil, buttermilk and eggs. Seasonings include black pepper, salt, paprika, garlic powder, onion powder, cayenne pepper and cumin. Peanut oil for the frying. (no lard!)

I'm going to brine (water, salt, peppercorns, honey, lemon, garlic, bay leaves, thyme, parsley, rosemary) for 8-12 hours then fry after dusting, dipping in buttermilk and coating in the seasoned flour again - very similar to what you're using, minus the cumin.

Yeah, if you have the oil hot enough and you drain it after frying, you shouldn't get super greasy chicken. I mean, it's absolutely greasier than air frying, but fuck air frying. I want FRIED CHICKEN!I tried a Ninja Foodi for air frying, and air fried is just no comparison. The chicken doesn't really brown well and does not brown evenly.
What it does well is grill/broil chicken.

Them fuckers are all wound up. I had a buddy that has fished the entire state for 20 years, and has been checked for his license and count twice. Says he hasnt fished in 5 months where he wasnt checked, and thought he might go to jail a couple times, even he was legit. He blew well under legal limit, passed field sobriety, and they were still threatening to take him for DUI cuz there were 3 beer cans.
