A nice dark roast beef gravy is my favourite. Can't say I've ever had sausage gravy.

I've made some pretty good vegetarian gravy with charred onions, black pepper, and mushrooms (not really trying to make it taste like sausage, but going for the peppery aspect) ...
But good lord, where the hell would one even start with a vegan gravy.
The main ingredient is milk!!!
If someone is going to make a damned vegan gravy, they may as well aim for gluten-free, too, and really just fuck it all up and render it beyond inedible!
