I do have pork shoulder right now but although I am tempted I did al pastor quite recently so it will probably be done in a different style.

From my local place Cantina Mexican. Enchiladas Supremas. One each of cheese, beef, and chicken enchiladas covered in sauce, served with rice and beans. With a Tecate to wash it down.
