I am not big on brisket, probably because we never BBQed/smoked beef so I never developed a taste for it. Use a good cut, don't go crazy with the rub, cook it low n' slow.

I know, and I'm from the south and grew up on pork BBQ too. Pulled pork and ribs are more forgiving and seem like a better treat to me. But I won't discount burnt ends and good brisket like it was common chicken. That tracks well. And ribs never have sauce. Unless you're doing it wrong or are some kind of moron from St. Louis / Kansas City.Spareribs. Cherry wood. 3.5 hrs, no wrap. No sauce.

Growing up mainly in Texas, beef was it. God I love beef. Then Chili's came out with that baby back rib jingle and everything went pork ribs on the menu. Then the fake it's healthier for you chicken dishes. That used to be a side dish, wings, are now not only meals but have entire restaurant chains dedicated to them. If its the Weber Smokey Mountain it's one of the one's I started with and still have. I have an offset and a drum smoker also. And yet I hardly use any of them lately. Because unless I am cooking for a large group....I just use my Weber kettle. It's just too easy to do it that way and it gives me something to do while I sit outside drinking beer and watching the wildlife....
So now that I have my patio poured and got rid of grill I have a space for a smoker. I would be a pellets guy. I don't sit for long. My bro has an electric one and it does the job but pellets would be my choice.
Suggestions?
