I am not big on brisket, probably because we never BBQed/smoked beef so I never developed a taste for it. Brisket and even beef ribs just don't appeal to me, even a top five rated Texas BBQ joint. I just grew up on pork BBQ and back in the day, a BBQ was a family event instead of a food. Use a good cut, don't go crazy with the rub, cook it low n' slow.

I know, and I'm from the south and grew up on pork BBQ too. Pulled pork and ribs are more forgiving and seem like a better treat to me. But I won't discount burnt ends and good brisket like it was common chicken.
