Smoked a brisket today. Put it on last night around midnight. Pulled it off at 5:00 (17 hour cook) and let it rest for two hours. Paired it with a homemade potato salad and Mac and cheese.

Turned out pretty good. Lots of leftovers as well.

What would you do differently next time to make it awesome instead of pretty good?

I ask because it seems I can't get a brisket to turn out awesome or like I think it should be.

I don't do brisket enough because it creates a ton of leftovers that have gone to waste in the past.

That's what I have...a Pit Boss Navigator. Pit Boss and Louisiana Grills are run by the same family...And the guy who invented Traeger grills works for them.

So those are all about the same. Weber should stick with charcoal and gas grills....their pellet grills suck.

Traeger has definitely gone downhill with cheap parts after they became the brand name.

I've never seen one that came with a grill work worth a shit. I don't use them because they are not accurate.

Invest in a good quality digital one instead. I have ThermoWorks because they work good.

Everyone should have one of these for sure. I have this exact one. It reads instantly.

I have a unit that has 4 different probes but it's so old it doesn't appear to be made anymore....but they have some similar to it. I've been thinking of going wireless but never did yet because the old stuff still works as it always did and I am familiar with it.

So currently rural king has the 850 and it has blue tooth as well as wifi. $599. Sale $50 off.

They have the 820, which is what I belive is same machine but no blue tooth or wifi. 599, nothing off. But they have two displays built. Was gonna haggle with them and see what they will do.

Thoughts?

This 1100 model is a huge one. The 850 is about the size a family of 5 or 6 would need. The big one would be best suited for cooking for larger gatherings. The Sportsman Series is not as good as the Competition Series. Thicker material used and it will last longer.
