Who here owns a smoker?

Doing a brisket for Easter.

I did one yesterday. I was digging through the deep freezer looking for some deer sausage and came across a whole packer frozen solid on the bottom.

Dug that sumabitch out and defrosted it. I was going to let it defrost slowly in fridge and cook for Easter but the plastic wrapping came loose and liquid was starting to accumulate so I fired up the smoker and trimmed that bitch up...slapped on some rub and many hours later it was done. It came out delicious. One of my best briskets actually.
It was like jelly!

For the wife's family. You don't need to twist my arm too hard to get me to cook brisket.
I am not big on brisket, probably because we never BBQed/smoked beef so I never developed a taste for it. I have had some really good brisket visiting my in-laws in Houston, TX but it still didn't do much for me.

I started trying to make brisket a few years ago. The best results are something that is about half as good as what Texas can produce. The worst is bad lunchmeat that I feel bad giving to the dog.

Use a good cut, don't go crazy with the rub, cook it low n' slow.

Brisket and even beef ribs just don't appeal to me, even a top five rated Texas BBQ joint. I just grew up on pork BBQ and back in the day, a BBQ was a family event instead of a food. And let's face it, anyone in my family that could afford non-burger beef was probably too highbrow to show up ...

I know, and I'm from the south and grew up on pork BBQ too. Pulled pork and ribs are more forgiving and seem like a better treat to me. But I won't discount burnt ends and good brisket like it was common chicken. It's trickier, but probably worth it.
